Near the end of 2007, Rothaus acquired the hotel next to the brewery area and set up a fan shop there. He sent me on my way with a case of his Tipopils and the vacation was elevated to an entire new level. I wouldn't be shocked if they did, but the signs in the brewery state they use pellets and also show leaf. The malt bill is probably 100% Continental Pils malt or close to it. I just stayed at Rothaus for a few days and did the brewery tour.

I still remember that feeling of dry, sharp bitterness, suspended into a mellow flow of caressing malt sweetness and texture. The capacity was increased to one million of beer. The couple soon decided to open a beer hall, Black Forest Brooklyn, to bring the tastes of their homeland to their new home. Again, sometimes you need to twist the rules. Unfortunately I have to rate this so low as it tasted nothing like the alcoholic version and the taste was certainly not to my liking. But despite its unusual size, the Tannenzäpfle quickly made more and more friends. For one, Holler claims Rothaus is the only German export pilsner that comes unpasteurized, something that allows the beer to retain aromas and flavors from the yeast and proteins that remain following fermentation. And the packaging echoes its roots in a grand way. But what separates the best from the rest is process and water chemistry.

These pinecones are what gave this beer its name. . It was there I first encountered Mary, the perfect intersection between the balance you can bet your life on from a Hill Farmstead beer, and the archetype of a craft pilsner. I tried asking the guide what if and what they used for a decoction schedule. The label of depicts the spruce-fir pinecone branches of the forest and these pinecones are what this beer is named after, Tannenzäpfle. Big fan of both this beer and Upland.
