I just made a big batch of beef stock last week and this was the perfect use for some of it! Potatoes are optional— Makes it even more filling and hearty. Cook on low for 7-8 hours or high for 4-5 hours. Everything goes in the instant pot, you set the timer and voila! Why pressure cooker soups are better than on the stovetop? The barley was cooked to our liking not too squishy, not too firm and the meat was incredibly tender! This is one of those dump and go soups. Yes, brown rice would be a great alternative to barley, or you can use any small pasta like ditalini or elbow. Also, I make this on the stovetop, but have only ever been able to find Quaker quick cooking barley. This recipe will continue to see many reappearances if I have anything to say! I made this today and it was so delicious! I cut up all the leftover Prime Rib today. It does list slightly less cumin and water but everything else is exactly what yours is.

I separated the bones and fat from the meat, then chopped it up and put it back into the soup before serving. Yes, it can be frozen, but may need additional broth when reheated if the barley soaked it all up. I also add some garlic 1 or 2 cloves minced. Adjust amount of seasonings- Add more or less Italian seasoning, based on your preference. Stir the chicken and corn back into the slow cooker.
